As a kid, Matt dreamed of running his own market—even if he was mostly daydreaming about what he could eat. By nineteen, he weighed 282 pounds and realized something had to change. He overhauled his eating habits, dropped 89 pounds, and discovered a whole new world of flavor where real, quality food made him feel truly alive.

That sparked a journey that led from the Culinary Institute of America to the kitchens of Michelin-starred Melisse, where he learned that great ingredients—and the right technique—can make magic. He cooked for athletes, celebrities, and CEOs, even appeared on TV once, but he wanted to bring his craft to everyone, not just a select few.
